    Wine and Regional Food Pairing 2023

    This menu is designed for the traveler that does not know Western Georgian wines well, and who wishes discover Western Georgia through the pairing of wine and regional cuisine, specifically Samegrelo’s gastronomical culture, in addition to an introduction to the wines.

    • The menu includes 4 natural wines made from local endemic grape varieties (90 ml each) paired with 4 Megrelian dishes served in tasting portions;
    • Guests will be supplied with a detailed written description of the wines and food (Georgian / English options available);
    • Length of tasting – 1 hour;
    • Minimum 2 people;
    • Price - 40 GEL (per person); 
    • Discount is available to partner companies for groups of more than 15 guests.

    White
    1. Tsolikouri 2022. Dry, white. Lechkhumi, village Orbeli (Tsageri).

    Spontaneous fermentation and aging with no skin contact, in stainless steel vessel. 
    Wine is produced from organically grown vines, with no chemical additives.

    Food pairing
    Seasonal pkhali – wild greens (/ vegetable dip) seasoned with walnuts.

    Rosé
    2. Orbeluri Ojaleshi 2021. Dry, rosé. Lechkhumi, village Orbeli (Tsageri).

    Spontaneous fermentation in kvevri with no skin contact. Aged in kvevri for 5 months. 
    Wine is produced from organically grown vines, with no chemical additives.

    Food pairing
    Fresh gebzhalia roll with strained matsoni.

    3. Irina 2022. Dry, rosé. Samegrelo, village Chaburta (Martvili); Lechkhumi, village Orbeli (Tsageri).
    Co-fermentation of two grapes: Tsolikouri, Orbeluri Ojaleshi.
    Spontaneous fermentation with no skin contact, and natural aging in stainless steel vessel. 
    Wine is produced from organically grown vines, with no chemical additives.

    Food pairing
    Chicken in bazha sauce, served on light chvishtari corn and cheese bread.

    Red
    4. Dzelshavi 2021. Dry, red. Racha, village Bostana (Ambrolauri).

    Spontaneous fermentation in kvevri with all skins. Aged in kvevri for 6 months. 
    Wine is produced from organically grown vines, with no chemical additives.

    Food pairing
    Megrelian kharcho served on toasted elarji.
